3 sweet potatoes, peeled
Few squirts of olive oil spray
4 portobello mushrooms
1 garlic clove, crushed
20 cherry tomatoes on the vine
4 x 125g (4oz) rump steaks, trimmed of fat
Heat oven to 220°C or Gas Mark 7. Cut the potatoes into finger-sized chips.
Bake the sweet potatoes with 4 squirts oil spray for 25 mins.
Arrange the mushrooms in a roasting tin, season and top with garlic. Squirt each mushroom once with olive oil spray and add 1tsp water to each. Add the cherry tomatoes to the tin. Bake at the same hot temperature for 10 mins.
Heat a griddle pan until sizzling, cook the steaks for 4 mins each side and serve with vegetables.
